Conor Roger’s Health Bowl RECIPE

Ingredients

Cabbage salad

  • 450g Cabbage, cut fine

  • 10gs Mint, cut fine

  • Juice of 2 Lemons

  • Oryx Salt

Tomato Salsa

  • Half Red Onion, 70g, diced

  • 2 Tomatoes, 220g, diced

  • Juice of 1 Lemon

  • Oryx Salt and Pepper

Grilled Chicken

  • 1 200g Chicken Breast

  • 1tsp of Cayenne Pepper

  • 1tsp of Paprika

  • 1tsp of Garlic Powder

  • 1tsp of origanum

  • 1tbl of Butter

  • Grilled Mushrooms

  • 250g Portobello Mushrooms, sliced

  • 1 large clove of Garlic

  • 5g of Parsley

  • 2tbl of Butter

Hummus

  • 1 can 400g Chickpeas, drained

  • 1tsp Durban Masala

  • 2tbl Lemon juice

  • 1 large clove of Garlic

  • Half cup Olive Oil

  • Half tsp of Paprika

  • Oryx Salt and pepper

Avocado

  • 1 Avocado, 220g

  • Pinch of Sesame Seeds

  • Juice of half a Lemon

Rocket Salad

  • 50g Rocket

  • 30g Feta

Method

Cabbage salad

Add all ingredients in a large bowl and salt to taste then leave in the fridge to cool until ready for plating.

Tomato Salsa

Add all ingredients to small bowl then add salt and pepper to taste and leave in the fridge to cool until ready for plating.

Grilled Chicken

Slice chicken down the centre making more cuts diagonally to open the breast up and spread it out, this is called butterflying. Add all herbs and spices all over the chicken breast. Add butter to pan and let it melt, once ready place chicken breast to the pan and cook both sides until a good crust is achieved on both sides.

Hummus

Add all ingredients into a liquidizer and blend until a thick and creamy consistency is achieved

Avocado

Open avocado in half, remove the pip and slice longways groves into the avocado and remove with a spoon. Garnish with sesame seeds and lemon juice.

Rocket Salad

Place rocket into bowl and sprinkle feta on top.

Plating

Get and large flat bowl, place hummus in a small ramekin in the centre of the bowl and place all the ingredients around in a circle.
