My cravings are not limited to chicken livers; I also hanker after boerewors, tomatoes and hot peri-peri sauce. With the result a staff meal at Hartford often ends up being a wors roll. Thick lashings of butter, English mustard as well as tomato-and-onion chunky chutney - or a homemade onion relish - more-than meet my craving.

Chunky Tomato and Onion Relish Recipe

Makes a medium sized bowl

Ingredients:

  • 10ml Salted Butter

  • 10ml Sunflower Oil

  • 1 small Onion, sliced

  • 3 cloves Fresh Garlic, grated

  • 2 medium Tomatoes, chopped

  • 15ml All Gold Tomato Paste

  • 10ml Mrs Balls Chutney

  • 10ml HP Sauce

  • 5ml Worcestershire Sauce

  • Salt and Pepper

Method:

  1. In a saucepan, heat the butter and sunflower oil together.

  2. Add the onions and garlic and fry well.

  3. Add the tomatoes, mixing this well and frying until soft.

  4. Add the remaining ingredients and season well with fine salt and freshly grounded black pepper.

  5. Cook until a relish consistency.
