CALLUM POLLARD’s Traditional Irish Stew RECIPE

Yields: 4 portions

Ingredients

  • 360g (2) medium Onions, diced

  • 30ml Sunflower Oil

  • 1800g (2 packs) “Cure house” Lamb stewing meat

  • 1,5l Beef or Lamb Stock

  • “Oryx” Salt and Pepper

  • 950g (5) medium sized Potatoes, peeled and cubed

  • 15ml Corn Flour


Method:

  1. Dice the onions

  2. Add the oil to a large pot and brown the meat in batches, setting aside once browned

  3. Add the onions to the pot and sauté, add back the meat. Reduce to a low heat

  4. Add the stock to the stew and allow to simmer

  5. Salt and pepper the stew to taste

  6. Allow the stew to simmer for two and a half hours or until tender

  7. Cut potatoes into quarters and add to the pot, allowing the potatoes to cook through for another 1 hour

  8. Thicken stew with corn flour paste and serve with boiled white rice
