Risotto need not be always savoury. Thinking rice pudding, this sweet and spicy coffee risotto was born. Serve with fresh berries, chunks of chocolate and thick dollops of cream for a quick dessert option

Spicy Coffee Risotto RECIPE

Serves: 4

Ingredients:

  • 650ml Full Cream Milk

  • 350ml Coconut Milk

  • 30ml Instant Coffee Powder

  • 2.5ml Ground Ginger

  • 2.5ml Nutmeg

  • 2.5ml 5 Spice

  • 1ml Fennel Seeds

  • 1ml Whole Cloves

  • 1 Cinnamon Stick

  • 2 Cardamom Pods, crushed

  • 30gr Salted Butter

  • 100gr Risotto/ Arborio Rice

  • 45ml Kahlua Liqueur

Method:

  1. In a saucepan, bring the milk and coconut milk with all the spices to the boil, then turn down the heat to a low simmer.

  2. In another saucepan melt the butter, add the risotto and saute for one minute or so.

  3. Add the Kahlua.

  4. Ladle by ladle add the spicy coconut milk mixture to the risotto rice, until cooked - al dente.

  5. Serve with desiccated coconut, fresh blueberries, honey and whipped cream.
