Non-starchy vegetables are best (spinach, kale, broccoli, cauliflower); so I thought a broccoli pesto would be a tasty alternative to the norm. It includes low-fat cream cheese, and sunflower seeds that give an interesting depth of flavour without the richness and oiliness of pine kernels that are generally used in pesto. Anticipate a healthy bite of broccoli bliss!

Diabetic Broccoli Pesto Recipe

Yield : 350ml

Ingredients:

  • 250g fresh broccoli

  • 1 clove garlic

  • 1 Tablespoon lemon juice

  • 100g low-fat cream cheese

  • ½ cup firmly packed fresh basil leaves

  • 2 Tablespoons lightly toasted sunflower seeds

  • 1 teaspoon olive oil

Method:

  1. Blanch broccoli until just-cooked.

  2. Rinse under cold water. Drain well.

  3. Blend the broccoli with the rest of the ingredients until paste consistency.

  4. Serve as one would a basil or sun-dried tomato pesto.
