Ginger, fresh mint and lemon make the perfect, refreshing iced tea on a hot summer’s day. Add a few fresh-berry ice blocks for a splash of colour. (I can’t resist adding these same ice blocks to my gin and tonic) Ginger, mint, lemon and berries help reduce nausea so this recipe is dedicated to my many friends who are pregnant right now.

Ice-Tea with Fresh Ginger, Lemon, Mint and Berry Ice Blocks

Serves: 4

Ingredients:

  • 8 Raspberries, cut in half
  • 4 Strawberries, cut in quarter
  • Water

In a 16 block ice tray place a piece of each cut fruit into the block, full up with water and place in the freezer overnight

  • 6 Five Roses Tea Bags
  • 1500ml Boiling Water
  • 1 (120gr) Fresh Lemon, cut in slices
  • 50gr Fresh Ginger, skin removed and cut into slices
  • 30gr Fresh Mint

Method: 

  1. Mix all the above ingredients together in a big jug and leave in the fridge overnight.
  2. The next day remove the tea bags and ginger pieces.
  3. Add fresh Mint and the Berry Ice Blocks.
  4. Serve with extra berries on the side.
