Butter Chicken Curry with Gian Jeffers
This industry demands continuous multi-tasking and I impress upon the students that the responsibilities they undertake will determine their positions in a kitchen. My drive has always been about being proactive rather than demanding a bigger pay cheque. Remuneration will be determined by their commitment and the duties they shoulder.
At Jackie Cameron School of Food & Wine, Gian Jeffers has encountered an experience “that not many professions can compare with”. Gian has chosen to share his butter chicken recipe. Serve it to your family and friends – they are sure to be impressed. “In the Jeffers family we relish a good curry - and our absolute favourite is butter chicken,” he says, smiling at the thought of this dish. “The creaminess of the sauce, combined with aromatic spices, is a mouth-watering combination, and a family favourite. At home we take turns to make our own variation. Mine is the best!”
I can recommend Gian’s butter chicken – a dish that wasn’t served very often when I was growing up. My mother made the Durban-styled, South-India curries.
